Shōjin Dashi: Konbu & Shiitake Stock

Shōjin dashi is part of the repertoire of shōjin ryōri, which is the vegetarian Buddhist cuisine developed to help those "on the path" keep their minds free from the distractions of preferences and aversions that are often the primary obstacles to practice. A rich 100% vegetable broth, that is full of glutamic and guanylic acid, its depth and savor rival that of meat-based stocks, leaving little if anything to long for.
