This recipe for pickled chrysanthemum turnips is a great addition to any meal, but especially if you are following along with me and learning to adopt the ichi-jyu issai (一汁一菜) meal format that I espouse here at Tenzo's Kitchen. Ichi-jyū issai is the simple meal format that serves as the foundation of the traditional Japanese diet, consisting of one soup, one vegetable dish, and a bowl of rice.
This pickle, a bowl of steamed rice & barley, and miso soup made from the turnip peelings & leaves is all you need to get your first ichi-jyū issai meal on the table. It is how we ate throughout my monastic training on Mount Hiei. Everything superfluous removed, leaving only what is essential.
It is grounding, and conducive to mindfulness. In a world full of noise, and conflicting information regarding what and how we should be eating, it is a refreshingly uncomplicated approach, that provides us with the space to remove ourselves from the cacophony, look inwards, and breathe.
Simple, sufficient, and nourishing for body, mind, and spirit.
