Steamed Rice with Barley

This simple dish of steamed rice with hulled barley is as nutritious as it is easy to make. It has a slightly nutty flavor that can stand on its own, but is even better when served as the accompaniment to any number of seasonal plant-based dishes.


The secret is in washing the grains to remove any impurities, then allowing them to soak in clean water for an hour or so. This results in perfectly cooked grains with a clean flavor and springy texture in each bite.
